Recipe of the Week - Shrimp Taco's

Shrimp Taco's! 

A new family favorite! 
Thanks Beth for giving us your 2 lb bag of shrimp when you moved!

Ingredients:
Tortilla shells (we use small tortilla shells)
Chopped Letuce
Rice (Copycat recipe below for Chipotle's Rice!)
Shrimp (recipe found below)
Sour Cream

Combine above, roll up and ENJOY!



Chipotle Copycat Lime Rice Recipe

Total Time: 30 mins
Prep Time: 5 mins
Cook Time:25 mins

Ingredients: Servings:4


  • 1 teaspoon vegetable oil or 1 teaspoon butter
  • 2 teaspoons fresh cilantro
  • 2/3 cup white basmati rice
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 lime

Directions:



  1. In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.
  2. Add rice and lime juice, stir for 1 minute.
  3. Add water and salt, bring to a full rolling boil.(Some people have had success with 1 cup of water, but when I've made it with 2 it worked for me).
  4. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes.
  5. Add in the cilantro and fluff rice with a fork.

  • 2 tsp olive oil
  • 2 lb shrimp, shelled and deviened
  • 6 cloves garlic, crushed
  • 1/2 cup chopped fresh cilantro
  • 1 lime
  • salt and pepper
Heat a large frying pan on medium-high heat. Add oil to the pan, when hot add shrimp. Season with salt and pepper. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Sauté another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot!

Kids Craft - Elephant Watering Can

Kids Craft - Elephant Watering Can!
(Your little one will never want to stop watering your flowers!)
Here's the page I followed....

Supplies:

2 Milk Jugs (Emptied and cleaned)
1 Milk Jug Cap
Craft Foam (We used Construction Paper)
Hot Glue Gun & Glue
Elmers Glue
2 Google Eyes
Scissors
Pen
(In our case we quadrupled this!)


Start by cutting out the handle of your second Milk Jug and discard the rest. You can tell how to cut the handle out by looking at the main picture at the top of this page. (Every jug is different so do the best you can)

Discard the rest of the 2nd milk jug.

Start by tracing a bowl or hand drawing two LARGE circles for the ears. I had my son cut them out. Then glue them on your whole milk jug where the ears should go.


Next draw small circles just larger than your google eyes.....(or trace them with something) for the eyes. I had my son cut them out and glue them on. Then he glued the google eyes on top of those.

 
Next, I used scissors to cut small slits around the outside circle of one end of the 2nd milk jug handle. And then I used scissors to cut a hole in the top of the milk jug cap.

NOTE: Use the scissors to make a hole in the top of the cap...then cut in a circle. It doesn't have to be exact or perfect because you are gluing on top of it!

Next...cut small holes in the other end of the milk jug handle that will face outward...for a sprinkle type effect when the can is watering. (EVEN though it doesn't really work :)



Now...put the milk jug cap ON the WHOLE MILK JUG! (Very important...if you don't do this first you will end up with a crooked elephant trunk when you are done) Once the cap is in place on the milk jug...use your hot glue gun to adhere the scissor cut side to the milk jug cap. (USE A GENEROUS AMOUNT OF HOT GLUE TO SEAL IT)

Glimpse Into Motherhood: Week of 8/21/11 - 8/28/11 continued!

Last night we had a major storm which left our area without power!  So, Big Sis had no school today!  We had to go rescue Daddy in Cleveland since his truck died. We left early for a fun day at the park and a visit with the Pipers! We were very excited Big Sis had NO school!
I love Lil Bro's Shoes!  You can see his toes through the soles of his shoes!  $4 on clearance at Target!

We LOVE Preston's Hope Playground in Beechwood.  It is an all accessible handicapped playground.  There are ramps and big swings!  So much fun!

Aunt Piper had fun and tasty things planned for us!
Will always makes us laugh! 
Big Sis LOVES the piano!  She is very musical.  She sings and makes up her own songs and play any instrument she can get her hands on.  Thanks for letting her play your piano James!
It was a long day!  We picked up Daddy and now get to take him to pick up Uncle Keith's truck and trailer to pick up his truck that died in Cleveland this week.  We were so tired that we all fell asleep before Uncle Keith's house!  Guess who woke us up!


Now, Daddy has to fix his truck...a few little helpers keep their eyes on Daddy!



Now Mommy has to tell everyone to back up!
The truck is still not working, but the girls keep praying it will!  With the faith of a child.... :) 








Glimpse Into Motherhood: Week of 8/21/11 - 8/28/11

Big Sis is off to second grade!  She gets her own locker!

 and told us how "AWESOME" her teacher is!
Favorite part....her locker!  Well, that was just 1 of her favorite parts!
Now that orientation is over, on to her actual first day!

Day 2...





Tonight is Bis Sis's mini-majorette program!  She went to a 3 day camp over the summer and they get to perform on Band Night!  Daddy called 20 minutes before we left and said that his truck died on the other side of Cleveland and he wouldn't make it for Big Sis's show.  Well, we haven't seen him in a few days because of work and this news put everyone in a major tail spin.  Big Sis cried all the way there.  She was strong for the show and then the tears started after she finished and sat with me in the stands.  Momma knows a temporary fix for that....Let's go and get ICE CREAM!
